2 Easy Recipes For Cooking Spanish Food At Home
One of the toughest parts about any eating-out situation is possibly the never-ending battle of ‘what should we eat?’ As we come out of lockdown and the evenings are a little freer, the thoughts of a fun night out at your favourite restaurant are being real again! Now, however, why not spice up your meals at home by emulating some of your favourite Spanish meals?
Perhaps you’re missing all the excitement that a restaurant’s vibe brings, or you’re simply bored and waiting for our Spanish lessons in London to resume, learning and cooking an authentic meal from scratch is a fantastic way to relieve your frustration and become immersed in the Spanish culture.
As a way to keep your home menu exhilarating, and you entertained, we’re sharing two of our favourite Spanish dishes for you to try your hand at, at home.
Plus, you can pick up many of the delicious ingredients (and a cheeky bottle of Spanish wine) at the amazing Tapas Room in our headquarters, on their Saturday delis!
Gambas Al Ajillo Endiabladas (King Prawns With Chili And Garlic)
If anything screams restaurant-worthy, it’s some juicy prawns paired with a delicious glass of wine. You may miss visiting The Tapas Room after your Spanish lessons with us, but until we reopen, you can have the same experience in your own kitchen!
For this dish, you will need:
10 – 12 large peeled prawns
1 long red chili sliced
2 cloves garlic sliced
100ml olive oil
Paprika salt: 100g sea salt and 25g smoked sweet paprika
Once you have all of your ingredients ready, you can begin cooking away!
Method:
In a large saucepan, gently heat up the olive oil with the sliced garlic and chili and cook without covering for about 5 minutes.
While this is cooking, mix together the salt and paprika.
After 5 minutes, turn up the heat on the chili and garlic mix, and add in the prawns. Cook for 1 minute on each side.
Once cooked, pour the prawns and oil mix into a dish and add a sprinkle of paprika salt and serve.
A wonderful Spanish wine that we suggest to pair with this meal is a Zudugarai Txakoli Antxiola Rosado 2018. It has a mix of spicy, crisp acidity that will just add that extra touch.
Watch as your friends and family are blown away with your quality meal!
Espárragos A La Plancha Con Romesco (Griddled Asparagus With Romesco Sauce)
The second dish is perfect for a winter’s evening with loved ones. While you’re cooking up a storm, don’t forget to throw in the Spanish words for each ingredient – you may as well take this opportunity to brush up on your vocabulary skills. It doesn’t hurt that this will just add to the authenticity of the meal…and impress everyone you know!
For this dish, you will need:
4 – 6 large asparagus spears – blanched
Romesco:
6 piquillo peppers
100g unsalted almonds
2 plum tomatoes – diced
Splash olive oil
Splash sherry vinegar
Paprika salt (see previous recipe)
Parsley oil:
½ bunch flat leaf parsley
200ml olive
Splash sherry vinegar
Sea salt
2 cloves garlic – blitzed until fine
Method:
Blanch asparagus in boiling water for 1 minute and refresh in cold running water. In a small saucepan, add olive oil, piquillos, tomatoes, and garlic, and cook for 3 minutes until soft. Blend with almonds, sherry vinegar and paprika salt.
Using a griddle pan or frying pan, heat up a little olive oil, then add the asparagus and colour on all sides. Plate up with a nice amount of romesco sauce and parsley oil.
For this dish, a wine that will go particularly well is a Mar De Envero Terra Norte 2018. The tropical touch in the wine will add a perfect finish to your meal.
